Moraine lake - isn't it gorgeous? My favourite people in the world ....
On Friday we took the kids to Moraine Lake up at Lake Lousie to show the kids the place Dallin proposed. It was crazy getting there and it was late afternoon before we arrived but it turned into a beautiful day (pouring rain in the morning and we almost didn't go) and we had such a nice time. We climbed up the lookout over the lake and then walked the path along the side of the lake to the waterfall at the end and then back. We showed the kids the approximate spot where Dallin asked me to marry him and the girls thought it was so romantic. We had hiked up off the path up the mountain a bit int he forest of trees and had a picnic lunch on a sunny rock when he asked so we couldn't show them the exact spot since it was just a random place we picked to stop. The kids seemed to enjoy it though.
We drove to Banff after and took the kids to the Hot Springs at Sulfur Mountain. They got such a kick out of swimming in the giant "hot tub" and it was a perfect night, a little cool but not cold. Afterwards we took the kids for dinner and drove home. It was so late but the kids slept all the way home and we just enjoyed the silence :)
We also took the kids to the lake both Saturday and Monday. My dad joined us Saturday and the kids loved having him there to play with them all day. It is so nice to have them living so close since they can come do things like that with us at any random time and I know my kids love having their grandparents be such a big part of their lives. Yesterday was SO super hot and I think we all got a bit of heat stroke since we were out in the 32C sun for about 6 hours. We all slept like logs last night!
This week for dinner:
Sunday:
Apple Dijon pork tenderloin (used same recipe but used a pork tenderloin instead), baked potatoes with sour cream and chives, vegetable hash with fresh basil and parmesan and some grilled yellow and green zucchini from our garden, plus a salad we never ate since we were so full! Brownies for dessert.
Monday:
omelettes, bacon, whole wheat toast and fruit
Tuesday:
Coconut chicken tenders, oven fries, glazed carrots and zucchini, salad - for me I will turn this into THIS coconut chicken salad with honey mustard vinaigrette
Wednesday:
steak fajitas with spanish rice, corn and salad
Thursday:
taking dinner to someone so possibly the crockpot butter chicken with brown rice, steamed green beans and salad, cinnamon buns for dessert. If not, Moroccan Chicken over quinoa with green beans and a tomato, duke and red onion salad
Friday:
homemade pizza, raw veggies and fruit - cheese or pepperoni for the kids and fig, prosciutto and arugula or chicken, caramelized onion, artichoke and sun dried tomato for the adults
