Week 52

A whole year!  I have been doing this for a whole year!  Actually I have done it longer than a year since I started last March or April but I have officially done 52 weeks of menus (I took weeks off here and there for trips and stuff).  What excitement.  Who knew I could do it this long?  Are you sick of me yet?  Oh wait, I forgot, this is just for me.  Never mind.  Moving on.
I got a sunburn yesterday and it felt GLORIOUS.  I know that seems silly but it was just a tiny golden red burn tan and I was just so happy that it was warm enough to get one that I didn't care.  It is gone now anyway.
Dallin is writing his final exam tonight and then he is off for the summer.  I am so beyond excited to have a normal schedule around here, especially with soccer over as well.  School is out Thursday morning and then we are free!  Well, except that Dallin is going away for his golf weekend with all of his friends on Wednesday night.  Single mom-hood strikes again!
This week for dinner:

Sunday:
roasted garlic and onion roast beef, mashed potatoes, gravy, zucchini, strawberry and feta green salad with a delicious balsamic dressing

Monday:
Chili Rubbed Pork Tenderloin with a Peach Ginger glaze, oven roasted potatoes, garlic mushroom green beans, caesar salad

Tuesday:
corn chowder and fresh buns, chopped salad with chicken (it is cold and supposed to be miserably rainy today)


Wednesday:
Blackened chicken with cilantro lime quinoa and avocado cream sauce (Yes, I know this has been on my menu a few times but we have not made it yet!), grilled zucchini and glazed carrots

Thursday:
spinach and artichoke pasta (plain alfredo for the little ones), green salad

Friday:
pizza maybe or out for dinner - Dallin will be out of town

Saturday:
Tacos with homemade salsa, chips and guacamole, spanish rice

What are you cooking this week?  What dish have you tried lately that you have just loved?  We LOVED dinner on Monday - that pork was to die for!!!  I will post the recipe soon :)
