At the Neil Diamond concert last month
Dallin is back in school now and it has been quite a shock to be thrown back into the deep end. Last week he had a block week course which means he takes a full semester course in 6 days. It is brutal and cruel and academic overload but of course he breezed through it all. That being said, I am glad there are only one of those a semester! Now on to the regular work all day, coursework at night schedule. Yipee!
The Temple is getting so close to being completed. We booked our time today to go through for the tour and I cannot wait! It is going to be gorgeous!
I got another 30lbs of peaches so this week I will be doing jam and Spicy Peach BBQ sauce. Wish me luck :P
This week for dinner ....
Sunday:
Mexican food - chicken and pepper fajitas, homemade guac and chips, refried black beans (very garlicky ones - I accidentally added too much garlic and they were strong!) and a spinach salad. Peach cobbler for dessert
Monday:
Pasta with a pesto cream sauce, chicken and cherry tomatoes and some buttered peas on the side. Dallin has class so we went easy
Tuesday:
Back to school feast (this had to wait to accommodate Dal's schedule)- General Tao chicken drumsticks, pork dumplings, veggies and dip, fresh fruit, cheese and crackers, and some boursin and baguette. Just a mishmash of things really .....
Wednesday:
Beef Stew over garlic mashed potatoes, green beans, roasted beets and a green salad
Thursday:
Pork Satay over brown rice, zucchini and carrots, spinach and mandarin salad
Friday:
Hawaiian Chicken over coconut rice, corn on the cob, grilled zucchini
Saturday:
It looks like Dal might have a meeting in Calgary and then we will have Temple training that night (for volunteering at the new Temple) so we will probably go out to eat afterward :) I need a night out!
