Week 54

Dallin took Lydia to the bathroom at Disney and ran into Winnie the Pooh - Lydia was in heaven!

Summer, glorious summer.  It is here.  It is sunny and hot and we are outside every day.  We play at the beach and in the sprinkler, jump on the trampoline and eat ice cream.  It is wonderful!  Dinners will be taking the back burner for now so while I attempt to make menus, know full well that they will probably not be adhered to much.  It is, after all, hard to make dinner when you are still at the lake at 5:30pm :)

This week potentially for dinner:

Sunday:
Pork chops with a maple dijon white balsamic marinade, mashed potatoes, roasted parmesan asparagus, caprese salad (tomato, bocconcini, basil with a balsamic dressing)

Monday:
Frozen pepperoni pizza for the kids, leftover Cafe Rio for Dallin and I

Tuesday:
We are having the missionaries over for dinner so I think we will make chicken souvlaki with pita and tzatziki, greek marinated roasted potatoes, green beans and a greek vegetable and feta salad

Wednesday:
steak with a creamy peppercorn sauce, polenta, grilled peppers, mushrooms, zucchini and onions, spinach and strawberry salad with a maple balsamic vinaigrette


Thursday:
Chicken stirfry over rice with lots of veggies (broccoli, onions, mushrooms, peppers, zucchini, carrots) and some dumplings.  I may take the girls to go see Carley Rae Jepson at the Stampede that night so if we do, this will have to be really early.

Friday:
Depends on if we eat at home or go out that night - if we eat at home maybe some homemade big rock burgers with avocado, blue cheese, sautéed red onions and some veggies and dip on the side

Saturday:
If it is a nice day we may take the kids to the lake and do a picnic dinner, if not we will come up with something at home.  Or eat breakfast for dinner .....

What are you cooking for dinner?  What is your favourite summer treat?  I love homemade ice cream :) I just got an electric ice cream maker and I am dying to give it a whirl!
