Week 25


Well, happy November and welcome winter.  I knew it couldn't last long with the gorgeous fall we had.  I think it is a record to not snow through all of September and October!  We only got a sprinkling and it is 90% melted but the transition has begun.
Speaking of transitions (nice, huh?), does anyone else HATE Daylight Savings?  It just throws everyone off and for my son who already likes to get up early, it means unholy hours of the day are being seen on our clocks when he dashes into our room in the morning.  He knows he should not be up - he can read the clock - and yet his body is awake and he cannot go back to sleep.  I am hoping we can work out a truce or else I may be grumpy for the next 6 months.
We as a Primary Presidency are trying to come up with all of the teachers for all of our classes for next year.  hats off to any of you who have done this before because I have literally been consumed by it and cannot stop thinking about it.  I wake up in the night with names of teachers or concerns about classes.  I will be SO glad to have January come and go!!!
Anyway, this week for dinner ......

Sunday:
Greek pork tenderloin, roasted potatoes, tzatziki, broccoli and Greek quinoa salad

Monday:
chicken stirfry over shanghai noodles, pork dumplings and maybe some spring rolls

Tuesday:
beef stew over creamy mashed potatoes, green beans and spinach salad with tomatoes, cukes and peppers

Wednesday:
Ricotta Stuffed Shells with caesar salad


Thursday:
Coconut Green Curry chicken over brown rice, some kind of green veggie - we will see what I buy this week but Bok choy sounds good with this

Friday:
We may be driving down to the border and back, so depending on what our day looks like probably something easy like Farfale alfredo

Saturday:
We have adult session of stake conference and then are going out to dinner after ... we will see where depending on who is going.

Okay all, what are you cooking?  What are you craving now that it is cold out?  I want warm gooey cheesy pasta dishes right now .....

  1. I wish I could make warm gooey cheesy pasta for dinner. It is all just rice over here at our house - darn celiacs.

    salmon and potatoes
    Winter Vegetable Curry in a Hurry (RachelRay)
    Ground turkey stuffed Zucchini, Tomatoes, Mushrooms.

    Now I got to get off my butt and start making it!
