Love Muffins aka Raspberry Jam Muffins
This recipe reminds me of my sweet mother-in-law. She puts so much love into everything she makes and these muffins are no exception. I remember fondly watching her make batch after batch of these while my Mr. and I were dating, only to have them gone in minutes. He is the oldest of seven children and there is no keeping warm muffins around, especially when they taste like this. I have tinkered with it over the years to make them better and you can make them even healthier but upping the whole wheat flour but I think this is just right. For a real treat make them with all white flour and slather them with butter. Heavenly!!! Try them out on Valentine's Day for your littles and/or Mr. The red centre is perfect and everyone will think they are eating a treat and you can feel better since it is a muffin, technically. Win, win.
Raspberry Jam Muffins aka Love Muffins
recipe adapted from the best Mother-in-Law ever
2 eggs
1 1/4 c milk (and more as needed)
1/4 c oil
2 c all purpose flour
3/4 c whole wheat flour
1 c sugar
4 tsp baking powder
2 tsp salt
raspberry jam
Whisk dry ingredients together. Beat eggs and stir into milk and oil in separate bowl. Make a well in the flour mixture and pour in wet. Gently fold to combine until all dry is incorporated. It should be a thick batter but if it is too thick you can add a few tbsp of milk as needed (I often need to - it is very dry here). Using a large cookie scoop, put one scoop into each greased muffin tin (this will make approx 18 muffins). Make a diver in each muffin and spoon in about a tsp of raspberry jam that is well stirred. Top each muffin with a small cookie scoop full of batter. Using damp fingers, gently press down and spread the batter until the jam is covered and batter is touching batter. Bake at 350F for 18-20 minutes just until cooked through. Let cool 5 minutes in pan and then turn out on a rack to cool. Cut into those suckers as soon as they are cool enough to eat. Slather it in butter for an extra indulgent treat.

mmm gotta love those muffins! They are one of my fave's! I can't wait to try the whole wheat with it as well :)
