Kids drinking Butterbeer at Wizarding World of Harry Potter
We also took the kids swimming at the dam and got caught in a massive storm, had a fire and roasted marshmallows and hotdogs despite a fire ban we did not know about and took the kids for a picnic and hiking in Waterton, plus a pizza dinner in the park and the hugest ice creams ever at the Pioneer Parlour. It was SUCH a fun 3.5 days and we made so many great memories!
On the menu this week:
BBQ ribs with homemade BBQ sauce (we will see how it turns out, I didn't use a recipe and just kind of threw a bunch of stuff in it), Killer foil potatoes with red onion and garlic, Summer vegetable skillet with mushrooms, garden onions, bell peppers and garden zucchini, tomato, fresh basil and some parmesan cheese, Taber corn on the cob and Dark Chocolate Zucchini Cake for dessert with whipped cream
Dallin has to go to a dinner for work so I am on my own with the kids. They also have golf lessons from 4-5 so it will probably be something simple. I have Basil coming out my ears so I am thinking of making some pesto so I will probably do pasta with a parmesan cream sauce for the kids and the pesto for me with some fresh veggies and a salad
Steak with a blue cheese cream sauce over garlic mashed potatoes, grilled zucchini and salad
Sweet and Sour pineapple meatballs over brown rice, broccoli and carrots
Chicken stirfry over thick shanghai noodles with lots of veggies and pork dumplings on the side
We are going away again this weekend for a mini family reunion with Dallin's family. It is actually just us and his youngest sister with her husband and son so it should be fun and not too insane, although my kids will be lonely without cousins to play with. We will be gone until Sunday night and I have no idea what our meals will be while we are there .....
What are you eating this week? What meal or recipe have you made recently that went over super well? We tried a Parmesan Ranch Chicken that was super good and all the kids loved. Recipe coming this week .....
